Miami Chef Makes Her Dreams a Reality
Miami is known for its beautiful beaches and fine dinning in areas such as the beach, downtown, Coral Gables, and now Doral. However, a young chef of Cuban descent, Eileen Andrade, began to open successful restaurants in suburban areas such as West Kendall.
“I was born and raised in this side of town (Miami) and I owe a lot to this place for shaping up the women that I am today,” said Andrade, owner of Finka and Amelia’s 1931. Opening a restaurant in suburban locations such as West Kendall was either a hit or miss in Eileen’s case; however, due to her uniqueness and dedication she got her first hit – Finka. “If I could describe her style of cooking, I would definitely say bold,” said Jonathan Andrade, Eileen’s brother. Eileen has gone above and beyond to create different flavors by the using different combinations of Cuban, Peruvian and Korean dishes. “There is nothing stopping Eileen from accomplishing her goals,” said Jonathan.
“My grandparents affected my life in and outside the kitchen. They risked everything they had, and left Cuba for the new generation such as me and my brother,” said Eileen. After the high success of Finka, Eileen decided to open a new restaurant: Amelia’s 1931. Amelia’s is a tribute to Andrade’s grandmother, who along side with her grandfather, would run Miami’s iconic Islas Canarias from behind a food counter. “It’s mainly counter-concept. You walk in and you’re kind of transported to your grandma’s house,” says Eileen. “The cuisine is very similar to Finka’s, but she wanted something a little more cozy, beer and wine,” said Johnathan.
However, Eileen does not want to stop, as she continues to dream big. “Hopefully within the next year or two we will be opening a speakeasy in Miami,” said Eileen. “The name is still unknown but we are planning for it to be library-themed.” With the help of her brother, Eileen hopes to be the firsts to create such a thing and do something myserteous with either the food or the drink that would be served. If the Andrade’s plans continue to become a reality they might just make a destination out of Kendall.
